As the season unfolds, the arrival of autumn harvest – the most anticipated time at Ballymaloe House Hotel, brings the vibrancy of produce to the kitchen. Our executive head chef Dervilla O’Flynn and her team prepare menus with seasonal vegetables, including courgettes, Jerusalem artichokes, various types of squash and beetroot. Meanwhile, in the sweets section, head pastry chef JR Ryall with his crew fall in love with pears again. Our signature dessert trolley is filled with seasonal cakes, and heavenly golden poached pears with saffron and cardamon.
The annual apple harvest takes place. Apples are hand-harvested from the 2-acre orchard by the Allen family members before they are shipped to the Apple Farm in Co. Tipperary. The experts on ‘all things apple’, produce Ballymaloe Apple Cider for us. The 2022 batch has been praised as an excellent vintage and is available on our menu for guests to enjoy. We also produce fresh apple juice from the harvest, which is served on the breakfast buffet. Both the cider and apple juice are used by our kitchen team in a variety of seasonal dishes.
